Raw and Fresh Burdock
In Taiwanese, burdock sounds like “Gno-bo” and is called “to-love-wife vegetable.” It is derived from Compositate, a biennial herbaceous plant; its rootstalk goes deep into the earth and contains the essence of the earth. Burdock is seen as a root vegetable and is rich in inulin, calcium, iron and fiber. The main areas of growth are spread across Taiwan, in areas such as Tainan, Chia-Yi, and Yun-Lin. Generally speaking, the main edible part of burdock is its underground root, and this cannot be polluted by air nor be afflicted by blight. This vegetable is not only free from the issue of pesticide residue, it even contains plentiful essence of the earth. It is also one of the favorite vegetables for Japanese and can be cooked according to personal preferences.

Serving Suggestions:

1.Can be made into burdock tea, deep fried, fried, or used as a kind of medicine as well.

2.Slice the burdock and add spare ribs for cooking soup, or cut into shreds and fry with meat strips.
